One of the hardest things I have had switching to a vegan diet is the loss of the wonderful meat sauce my grandmother use to prepare every Sunday afternoon. I started getting that urge for ziti with a sweet meat sauce and decided it was time to create a vegan version of it.
After several unsuccessful attempts I finally perfected it. I named this recipe what other than Meatless Meat Sauce. This recipe will be the base of all Italian recipes on this site.

Italian Meatless Meat Sauce
A wonderful tasting vegan friendly sauce that can be the base for any Italian dish you create. I have served this sauce to many of my non vegan friends and they all claim it's the best meat sauce they ever had. Then I tell them...
Instructions
Finely chop the garlic and sun dried tomatos.
Add the olive oil to a hot pot then add the all the chopped ingredients plus the package of chopped mushrooms. Cook until soft then add the vegetable stock, bring to boil frequently stirring.
Add the can of chopped tomatoes and stir till mixed.
Add the cans of tomato sauce, continue stirring until evenly blended together.
Add the Tofurky ground beef style to the sauce and stir.
Let cook for 30 minutes on low heat, drop in chopped fresh basil about a minute before you serve.
